Gaglioppo and Cabernet Sauvignon.
Calabria, central-eastern area in the province of Crotone, in Carfizzi, “Motta” locality.
Mixed soil, with a certain percentage of active limestone.
200 to 300 metres above sea level.
Espalier with a vine density of 5,600 plants per hectare.
Mediterranean, with mild winters and hot, dry summers.
Destemming and crushing, brief cold maceration with the skins, gentle pressing, free-run must yield of 60% from the grapes, followed by fermentation at controlled temperature.
In stainless steel.
Bottled at controlled temperature.
Salmon pink with cherry highlights.
Delicate, floral with hints of flowers and spices.
Soft, harmonious, lively and vibrant.
13% vol.
Pairs easily with rich starters, first and second courses based on fish, white meats.
8-10 °C.

The vinification takes place by leaving the pulp and skins of the grapes in contact with the must for the time necessary for them to release some of the colour.
Maturation takes place in steel tanks.
It pairs well with starters, soups and dishes that are not very robust.
It should be served cooler than room temperature and no lower than 18° C.

LE FORMELLE IS A ROSÉ WINE OBTAINED FROM GAGLIOPPO GRAPES, THE SKINS OF WHICH ARE LEFT IN CONTACT WITH THE MUST FOR AT LEAST TWENTY HOURS SO THAT THE WINE CAN ACHIEVE ITS COLOUR INTENSITY. THE MACERATION, CARRIED OUT AT A TEMPERATURE BELOW 18°C, HELPS TO ENHANCE FRUITY NOTES AND ELEVATE THE FLAVOUR COMPONENTS.

CIRÒ RED CLASSICO SUPERIORE “VINTAGE EDITION” was the first wine produced by the Caparra & Siciliani winery back in 1963. Reintroduced today in the Vintage version, it evokes the past while looking to the future.
It is obtained from the pure vinification of Gaglioppo grapes and aged in oak barrels.
Ideal with roasts, game and mature cheeses.
Should be drunk at room temperature.

Vinified in the traditional manner, it is matured in stainless steel tanks. Ideal with pasta dishes with meat sauce, roasts, braised dishes and long-aged cheeses. The wine should be served at room temperature and the bottles should be opened a few hours before serving.
